  1. Mexican Red Sauce

  2. 2 large can diced tomatoes

  3. 1 can tomato paste (small)

  4. 1 medium onion, chopped

  5. 1 cup water

  6. 1/4 cup olive oil

  7. 1 clove garlic, crushed

  8. 2 Tbsp cilantro (leaves only, chopped fine)

  9. 1 tsp lemon juice

  10. 1/4 cup diced green pepper

  11. 1 medium jalapeno, chopped

  12. 1 Tbsp cumin

  13. 1 tsp chili powder

  14. 1 tsp. paprika

  15. 1/4 cup sugar

  16. 1 tsp salt or to taste

  17. Combine all ingredients in a food processor or blender and blend

  18. till smooth. Pour into a medium sauce pan and add 1/2 cup water.

  19. Bring to a very lower simmer and allow to cook through for about 20 minutes. Makes an excellent topping for enchiladas, tamales,

  20. and Mexican chicken casseroles.
