  1. 2 c. raisins

  2. 2 c. water

  3. 1/2 lemon in razor thin slices

  4. 1/4 tsp. salt

  5. 1/2 c. sugar

  6. 2 tbsp. tapioca

  7. 9 unbaked pie shell & lattice strips

  1. Soak raisins overnight in cold water with lemon slices. Drain, save water. Add salt, sugar and tapioca to water. Cook over medium heat and stir until mixture thickens. Add raisins and pour into unbaked pie shell. Top with lattice strips of pie crust. Bake at 425 degrees for 35 minutes or until golden brown.
