  1. 1 lb 454g / 16oz Cod - sole or flounder

  2. 2 tablespoons 30ml Cornmeal

  3. 2 tablespoons 30ml Flour

  4. 1/2 teaspoon 2 1/2ml Cajun spice

  5. 2 teaspoons 10ml Oil

  6. 1 Salt and pepper

  7. 1 tablespoon 15ml Parmesan cheese

  1. Combine flour, cornmeal, cheese, and spices. Dredge fish in mix. Spray pan with Pam.

  2. Arrange fish in pan and drizzle with oil.

  3. Bake 450F for 8-10 minutes
