  5. 14 oz Sweetened Condensed milk

  6. VARIATIONS AFTER CAR'MLZED-

  7. SPICY CARAMEL TOPPING-

  8. 1/2 ts Ground cinnamon

  9. 1/4 ts Vanilla or almond extract

  10. Water

  11. NUTTY CARAMEL TOPPING-

  12. 1/3 c Nuts -- chop/toast

  13. 2 tb Flaked coconut

  14. CHOCOLATE CARAMEL TOPPING-

  15. 1 ts Vanilla

  16. 1 oz Unsweetened chocolate --

  17. Melted 1/3 c Nuts -- chopped

  18. Note - "milk" refers to one 14 oz. can of Sweetened

  19. Condensed Milk. Oven Method: Pour milk into a 9 pie

  20. plate. Cover with foil; place in larger shallow pan.

  21. Fill larger pan with hot water to just below pie plate

  22. 1 1/2 hours or until thick and caramel colored. Beat until smooth. Stove Top Method:

  23. Pour milk into top of double boiler; place over

  24. 1 to 1 1/2 hours

  25. or until thick and caramel colored. Beat until

  26. smooth. Microwave Method: Pour milk into 2 qt. glass

  27. measure. Cook on med. (50% power) 4 mins., stirring

  28. briskly every 2 mins until smooth. Cook on med-low

  29. 30% power

  30. 12 to 18 mins. or until very thick and caramel colored, stiring briskly every two mins. until

  31. smooth. To Reheat in Microwave: Place desired

  32. amount of caramel in a 1 or 2 cup glass measure. Heat

  33. 100% power

  34. 40 to 50 secs. or until warm,

  35. stirring after 20 secs. Variations after caramelizing

  36. Sweetened Condensed Milk: Spicy Caramel Topping: Stir

  37. in cinnamon, vanilla/almond extract; add water to

  38. desired consistency; mix well. Nutty Caramel Topping:

  39. Stir in vanilla, nuts, and coconut. Chocolate Caramel

  40. Topping: Stir in vanilla, chocolate, and nuts (if

  41. desired). Mix well. USES: As a pudding w/whipped cream

  42. and shaved chocolate. As a topping for ice cream,

  43. pound cake, or angel food cake. Combined with whipped

  44. cream to fill cream puffs or layer in parfaits. As a

  45. frosting or filling for cookies, cakes, and tortes.

  46. Spooned over baked apples, poached pears, rice
