  2. MOM'S THICK SPLIT PEA SOUP

  7. 1 c Dried green split peas

  8. 4 c Water

  9. 1 Onion, chopped

  10. 2 Carrots, pared and chopped

  11. 3 Celery tops

  12. 1 Bay leaf

  13. 2 ts Salt

  14. 1/4 ts Pepper

  15. Wash peas well with cold water and drain. Place in

  16. large saucepan, add water and drain. Place in large

  17. saucepan, add water and bring to boil. Add remaining

  18. ingredients, reduce heat to the lowest point, cover

  19. and cook for 1 1/2 hours. Remove cover and mash with

  20. fork or in food mill. Cook without cover several

  21. minutes to thicken if necessary. Adjust seasoning to

  22. taste. For a thinner soup, puree in blender or food

  23. processor. Serve very hot.
