  1. 0 1/3 1/3 cup Jam, red raspberry, seedless

  2. 1 tbsp dijon mustard

  3. 0 1/2 cup salsa

  4. 2 lb turkey breast cutlets

  5. 1 tsp grated orange peel

  1. Preheat oven to 350°F.

  2. In small bowl, mix raspberry jam, mustard, and orange peel.

  3. In separate bowl, place salsa. Add 3 tablespoons raspberry mixture. Stir well.

  4. Cover and chill both jam mixture and the salsa mixture.

  5. Rinse turkey and pat dry with paper towels.

  6. Place breast in roasting pan. Insert meat thermometer into breast.

  7. Cover and roast 1 to 1-1/4 hours until thermometer reads 170°F.

  8. During last 30 minutes, baste occasionally with jam mixture.

  9. Remove turkey from oven. Cover with foil and let rest 15 minutes before slicing.

  10. Garnish turkey with orange peel strips. Serve turkey with salsa mixture.
