  1. 2 cups chopped cooked chicken breast (about 1 pound)

  2. 2 cups red bell pepper strips

  3. 1 cup sliced celery

  4. 1 cup thinly sliced red onion

  5. 1 cup sliced cucumber

  6. 1/2 cup coarsely chopped fresh cilantro leaves

  7. 1 (7-ounce) package Italian-blend salad greens

  8. 3 tablespoons fresh lemon juice

  9. 2 tablespoons fish sauce

  10. 1 tablespoon sesame seeds, toasted

  11. 1 teaspoon sugar

  12. 1 teaspoon ground ginger

  13. 1/2 teaspoon crushed red pepper

  1. To prepare salad, combine first 7 ingredients in a bowl.

  2. To prepare dressing, combine lemon juice and remaining ingredients, stirring with a whisk. Drizzle the dressing over salad, and toss well.
