  1. 1/2 cup pearl barley

  2. 1-1/3 cups water

  3. 1 (8-ounce) package cream cheese, softened

  4. 2 tablespoons Dijon mustard

  5. 1/3 cup chopped green onion

  6. 1/2 cup chopped red bell pepper

  7. 1/4 cup grated Parmesan cheese

  8. 1/2 teaspoon dried marjoram leaves

  9. Salt and pepper to taste

  1. Rinse barley and place in small saucepan with water. Bring to a simmer, reduce heat, cover, and simmer for 35-45 minutes until barley is tender, or according to package directions. Drain if necessary and set aside to cool for 20 minutes.

  2. In medium bowl, beat cream cheese with mustard until smooth. Add barley and remaining ingredients. Use immediately or cover and refrigerate up to 4 days.
