  1. 3 tablespoons vegetable oil

  2. 1 medium onion or 125 g, chopped

  3. 3 cloves garlic, crushed

  4. 400 g minced beef

  5. 1 medium eggplant or 250 g, cut into large cubes

  6. 3 baby zucchini or 300 g, cut into large cubes

  7. 2 medium carrots or 300 g, cut into large fingers

  8. 1/2 teaspoon ground black pepper

  9. 1/2 teaspoon ground cinnamon

  10. 1/2 teaspoon ground cumin

  11. 1/2 teaspoon ground cardamom

  12. 1/2 teaspoon ground cloves

  13. 1/2 teaspoon ground coriander

  14. 2 medium tomatoes or 300 g, peeled and diced

  15. 2 tablespoons tomato paste

  16. 1/2 cup coriander leaves or 35 g, chopped

  17. 2 cubes MAGGI® Chicken Bouillon

  18. 2 cups water or 500 ml

  1. Heat oil in a large sauce pan. Add onions and garlic and cook for 3-4 minutes or until it becomes yellow in color then add the minced beef. Cook for another 5 minutes.

  2. Add eggplant, baby zucchinis, carrots and spices. Stir then add tomatoes, tomato paste, coriander, MAGGI® Chicken Bouillon cubes and water.

  3. Bring to boil, simmer over low heat for 20-25 minutes or until vegetables are cooked.
