  1. 30 lb Ground beef

  2. 3 lb Onions, chopped medium

  3. 2 lb Flour, hard

  4. 1 lb Shortening

  5. 19 lb Tomatoes, canned, chopped

  6. 1 oz Nutmeg (or mace)

  7. 1/2 ga Water

  8. Salt and pepper to taste

  1. Brown off the beef and onions in a medium copper.

  2. Incorporate flour to make a roux.

  3. Cook, stirring with paddle for 7 minutes to lose starch taste.

  4. Add shortening only if needed Add remaining ingredients.

  5. Adjust consistency and taste as necessary.

  6. Ladle over toast.
