  1. FROSTED BANANA CAKE

  2. Yield: 3 -4 dozen.

  3. 1 1/2 cups sugar

  4. 2 eggs

  5. 1 cup (8 oz.) sour cream

  6. 1 tsp. vanilla

  7. 2 cups all-purpose flour

  8. 1 tsp. baking soda

  9. 1/4 tsp. soda

  10. 2 medium ripe bananas, mashed (about 1 cup)

  11. 1 package (8 oz.) cream cheese softened

  12. 1/2 cup butter or margarine, softened

  13. 2 tsp vanilla

  14. 3 3/4 to 4 cups confectioners' sugar

  15. In a mixing bowl, cream butter and sugar. Add eggs, sour cream

  16. and vanilla. Combine flour, baking soda and salt; gradually add

  17. to the creamed mixture. Stir in bananas. Spread into a greased

  18. 15x10x1 inch baking pan. Bake at

  19. 350 degrees for 20 - 25 minutes

  20. or until a toothpick inserted near the center comes out clean.

  21. Cool. For frosting, in a mixing bowl, beat cream cheese, butter

  22. and vanilla. Gradually beat in enough confectioners sugar to

  23. achieve desired consistency. Frost bars. Store in the refrigerator.
