  1. Caesar Salad

  3. 4 anchovy fillets, chopped

  4. 1 teaspoon Worcestershire sauce

  5. 1 tablespoon red wine vinegar

  6. 2 tablespoons olive oil

  7. 1/2 teaspoon sugar

  8. 1 clove garlic, minced

  9. 1/4 teaspoon cayenne pepper

  10. 2 to 3 large heads romaine lettuce about 2 cups garlic croutons

  11. 2 tablespoons capers

  12. 2 eggs

  13. 1/2 cup parmesan cheese

  14. 1/2 teaspoon paprika

  15. salt and black pepper to taste

  16. sweet purple onion, thinly sliced

  17. Put two anchovies, Worcestershire sauce, vinegar, oil, sugar, garlic

  18. and cayenne into a large salad bowl. Use a pestle or the back of

  19. bottom of a spoon to mash into a paste.

  20. Tear crisp lettuce leaves into bite-sized pieces. Add to bowl; toss

  21. gently to coat evenly, with paste.

  22. Add croutons, remaining two anchovies, and capers; toss gently. Put

  23. eggs into boiling water for 1 minute; plunge immediately into ice

  24. water to stop cooking process. Crack eggs into salad and toss

  25. lightly. Add cheese, paprika, salt and pepper; toss. Add a few onion

  26. rings, if desired.
