  1. 6 Tbsp. olive oil

  2. 1/2 cup Prosciutto, chopped

  3. 10 oz. fresh spinach

  4. 2 1/2 cups mushrooms, sliced

  5. 1/2 cup walnuts, chopped

  6. 1/2 cup BelGioioso Romano cheese, freshly grated

  7. 2 Tbsp. garlic, minced

  8. 6 Tbsp. dry white wine

  9. 6 Tbsp. fresh lemon juice

  10. 2 Tbsp.

  1. Preparation : Heat oil in a heavy skillet over medium heat. Add Prosciutto and garlic. Saute 3 minutes. Add wine, lemon juice and sugar. Simmer 5 minutes. Place into bowl and cool. Season to taste with salt and pepper. Combine spinach, mushrooms, walnuts and cheese in large bowl. Toss with enough dressing to season to taste. Serves 4 people.
