  1. Ham & Swiss Phyllo 1/8 cup butter

  2. 1/8 cup flour

  3. 1 cup whole milk

  4. 3 cups Swiss cheese

  5. 2 tablespoons chives

  6. 1 tablespoon Dijon mustard

  7. 4 cups cured ham

  8. 16 sheets phyllo pastry

  9. melted butter

  10. Melt butter, add flour and make a roux. Add milk to roux and let

  11. thicken, then add cheese, chives and mustard; stir and let thicken.

  12. Add ham and stir.

  13. Use two sheets per serving. Butter first sheet, lay second sheet

  14. on top and butter. Put 1 tablespoon of filling at one end of sheets,

  15. in center, then fold sheets in thirds and roll. Baste with butter

  16. 350 for 10 minutes in convection oven.

  17. Can be cooked in conventional oven, but will not brown as well.

  18. 1/8 cup honey,

  19. 1/4 cup Dijon mustard,

  20. 1/2 cup sour

  21. cream. Pour 1 teaspoon across the top of each cooked phyllo.
