  1. 2 c. strained cooked pumpkin

  2. 1/2 c. sugar

  3. 1 1/2 tsp. cinnamon

  4. 1/4 tsp. cloves

  5. 1/2 tsp. ginger

  6. 1/4 tsp. nutmeg

  7. 1 tsp. salt

  8. 3 egg yolks

  9. 1 c. milk

  10. 3 egg whites

  11. 9 inch unbaked pie shell

  1. Combine pumpkin, sugar, cinnamon, cloves, ginger, nutmeg and salt. Beat egg yolks; stir into first mixture. Add milk. Beat egg whites until stiff; fold into the mixture. Pour into unbaked pie shell. Bake in very hot oven (450 degrees) for 10 minutes. Reduce heat to moderately hot (375 degrees) and bake 20 minutes longer, or until filling is firm. Serves 6.
