Yield: 4 servings

1/2 lb spinach, chopped or a

10 oz pkg frozen chopped spinach, thawed

1 tb olive oil

1 tb butter or margarine

1 lb ground beef or turkey

1 onion, diced

1/2 ts basil

1/4 ts marjoram

1/4 ts oregano

1 ts salt

1/4 ts black pepper

4 eggs

If using frozen spinach, place in strainer and drain well. Heat

oil and butter in large, heavy skillet. Add ground meat and cook,

stirring, until browned and crumbly. Add onion, and cook until

tender but not browned. Stir in spices. Stir in drained spinach

and cook until liquid has evaporated. Beat eggs, add to meat mixture

and cook, stirring, until eggs are set.

4 to 6 servings.
