  1. 4 tablespoons 60ml Rice vinegar

  2. 1 teaspoon 5ml Sugar

  3. 3 tablespoons 45ml Cucumber, very coarsely chopped, or sliced

  4. 2 Shallots, chopped

  5. 3 Red and green prik ki nu - (birdseye chilies), thinly sliced.

  1. Recipe Instructions Combine the ingredients, and leave to stand overnight. Each diner should have a small bowl of nam jim and a small bowl of a jad. However the satay themselves are normally served "communally".
