  1. 1 tablespoon chili powder

  2. 2 tablespoons Santa Maria seasoning

  3. 1 tablespoon smoked paprika

  4. 1 tablespoon ground coriander

  5. 2 tablespoons brown sugar

  6. 1 (3 pound) boneless chuck

  7. 3 tablespoons liquid smoke

  8. 2 cups beef stock

  9. 1 large onion , sliced thin

  10. 1 large bottle of your favorite barbecue sauce

  1. Combine the chili powder, Santa Maria seasoning, paprika, brown sugar and coriander in a bowl and set aside In a shallow bowl add 1 tablespoon of liquid smoke.

  2. Pat meat dry with paper towels.

  3. Place meat in bowl of liquid smoke and wet it completely.

  4. Then add the rub to the meat.

  5. Place meat in plastic storage bag and marinate for at least 1 hour, overnight is best.

  6. Place meat in the slow cooker.

  7. Combine 2 tablespoons of liquid smoke and stock then pour over meat.

  8. Cover with sliced onions.

  9. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the meat is tender.

  10. Remove roast and allow to cool.

  11. You can discard the cooking liquid or save for stock.

  12. Shred the meat and return to slow cooker.

  13. Add the barbecue sauce and mix well.

  14. Heat on low for about an hour.
