  1. Basic Cheesesteak:

  2. 6 slices Steak-umms

  3. Cheez Whiz to taste

  4. Fancy Cheesesteak:

  5. 1/2 lb. sirloin steak (Note: Rib eye and top round are popular choices, but rib eye is expensive and round is tough, so I use sirloin.)

  6. Salt and pepper

  7. 1 Tbsp. bacon grease or oil

  8. Good quality provolone (I prefer fontina); sliced

  9. 2 hoagie rolls; sliced horizontally

  10. 1/2 sm. onion; peeled and sliced

  1. Basic Cheesesteak:

  2. 1.a. Heat Cheez Whiz in a covered bowl in microwave at medium heat for 30 seconds. Stir.

  3. b. Heat a griddle or large, heavy frying pan over medium heat. Add steaks and cook for 45 seconds, flip and cook another 15 seconds. Chop meat coarsely.

  4. c. Divide steak and onions between rolls and spoon Cheez Whiz over them. Fancy Cheesesteak:

  5. 2.a. Freeze steak for 1 1/2 hours. It's shouldn't be hard but should be firm. Slice as thinly as you can across the grain, chop coarsely and season with salt and pepper.

  6. b Turn on broiler and place a rack 6 inches beneath it.

  7. c. Heat bacon grease or oil in a griddle or large, heavy frying pan over medium heat. Add sliced onion and cook 3 minutes until soft. Scoop into a bowl and set aside.

  8. d. Increase heat to medium-high. Add steak and cook, turning occasionally, for about 3 minutes until steak is browned.

  9. e. Divide steak and onions between rolls, add slices of cheese, and broil until cheese softens and begins to bubble.

  10. Note 1: BTW way, a Philly cheese should be eaten standing, legs spread to avoid dripping on your pants and shoes and leaning forward from the waist to avoid dripping on your shirt.

  11. Note 2: Another cheese option falling between the "flavored cheese product" and sliced cheese is to make Welsh rabbit and spoon that onto the sandwiches.
