  1. Persimmon Cookies

  2. 2 cups flour

  3. 1 cup almonds, ground

  4. 1 teaspoon baking soda

  5. 1 teaspoon ground cinnamon

  6. 1 teaspoon ground cloves

  7. 1 teaspoon ground nutmeg

  8. 1/8 tsp. salt

  9. 1/2 cup vegetable shortening

  10. 1 cup sugar

  11. 1 large egg

  12. 1 persimmon, peeled and pureed

  13. 1 cup raisins

  14. Preheat oven to 350 degrees.

  15. Combine flour, almonds, baking soda, spices and salt. In a large

  16. bowl, cream shortening and sugar. Beat in the egg. Beat in the

  17. persimmon puree. Gradually blend in the dry ingredients. Stir in

  18. the optional raisins. Drop the dough by spoonfuls 1 1/2" apart onto

  19. ungreased baking sheets. Bake for 10-12 min., until lightly colored.

  20. Transfer to wire racks to cool. Baking notes: Use overripe persimmons

  21. for these intensely flavored cookies. These cookies are delicious

  22. but perishable; store in the refrigerator. Yield: 4-5 dozen
