  1. 1 egg

  2. 2 tablespoons heavy cream

  3. 1 small tub (1/4 cup per pizza) mascarpone cheese

  4. 2 tablespoons Grated Parmesan cheese for sprinkling

  5. 1 ounce fontina cheese

  6. Pizza Dough (see below)

  1. Place pizza stone on floor of oven or on lowest rack in cold oven. Preheat stone at 500 F for at least an hour before baking pizza.

  2. Beat egg, cream and Parmesan together in small bowl. Shape pizza and place on well-floured wood peel. Dot the dough with teaspoonfuls of mascarpone. Dot the dough with pieces of sliced fontina. Gently shake the peel back and forth to make sure the pizza isn't stuck to it. If it has, gently lift off the stuck section and sprinkle a little more flour underneath. Just before putting pizza into over carefully spoon the egg mixture over dough. Using the peel like a large spatula, gently slide the pizza onto the preheated stone. Bake until the edges are golden with a few dark spots, approximately 8 or 9 minutes. When pizza is done take it off the stone with a large metal spatula.
