  1. White Chunk Macadamia Cookies

  2. 1/2 cup butter (1 stick), softened

  3. 1 cup brown sugar

  4. 1/2 cup coconut flakes, finely minced

  5. 1 egg

  6. 1 tablespoon milk

  7. 1 teaspoon vanilla

  8. 1 1/2 cups flour

  9. 2 teaspoons baking soda

  10. 1/2 teaspoon baking powder

  11. 1/2 teaspoon salt

  12. 8 ounces solid white chocolate, cut into chunks

  13. 1 cup macadamia nuts, chopped

  14. Cream together the butter and sugar in a large bowl with a mixer

  15. on high speed. Add the coconut, egg, milk and vanilla and mix

  16. well. In another bowl combine the flour, baking soda, and salt.

  17. Add the dry mixture to the wet mixture and mix until dough forms.

  18. Mix in the white chocolate and macadamia nuts. Preheat oven to

  19. 300 degrees while you let the dough rest for 30-60 minutes in the

  20. refrigerator. Measure out about 2 1/2 tablespoons of the dough

  21. and form a ball. Drop each ball of dough onto an ungreased cookie

  22. 3 inches apart and bake for 12-14 minutes. Do not over

  23. bake! Cookies should come out of the oven appearing slightly

  24. browned, yet under cooked. When cooled the cookies will be soft

  25. and chewy like the original. Makes 16-18 cookies.
