  1. 3 cups flour

  2. 3/4 tsp salt

  3. 2 tsp baking soda

  4. 2 tsp ground cinnamon

  5. 1/2 tsp freshly grated nutmeg

  6. 1/4 tsp cloves

  7. 1/4 tsp allspice

  8. 1 small can solid-pack pumpkin (15 oz)

  9. 1 cup vegetable oil

  10. 2 1/2 cups sugar

  11. 4 eggs

  12. 2 pats butter (for greasing pan)

  1. Preheat oven to 350, and place rack in center of oven.

  2. Sift together the flour & spices in a medium bowl.

  3. In a second, larger mixing bowl, whisk together the pumpkin, oil, sugar & eggs.

  4. Add the flour mixture, to the egg mixture, stirring until well combined.

  5. Divide the batter in half between the 2 greased loaf pans.

  6. Bake about 50-60 minutes until a wooden pick inserted into center of loaf comes out clean.

  7. Cool in the pans, then turn out onto a rack and cool completely.
