  2. Title: Very Wild Rice Salad

  5. 4 c Water

  6. 1 ts Salt

  7. 1 c Wild rice (about 6 ounces)

  8. 1/2 c Finely chopped dried figs

  9. -- (Calimyrna)

  10. 1/3 c Chopped toasted cashews

  11. -- (unsalted)

  12. 1/4 c Minced green onion tops

  13. 2 tb Finely chopped celery

  14. 2 tb Finely chopped red onion

  15. 2 tb Raspberry vinegar

  16. -OR- red wine vinegar

  17. 1 tb Fresh lemon juice

  18. 1 Garlic clove; minced

  19. 1 ts Dijon mustard

  20. 1 ts Sugar

  21. 1/4 c Vegetable oil

  22. 1/4 c Olive oil

  23. Place water and salt in a medium saucepan and bring to a boil. Add

  24. rice. Decrease heat to medium-low and simmer (covered) until rice is

  25. tender, about 45 minutes. Drain well and let cool.

  26. In a large bowl, combine cooled rice, figs, pecans, cashews, green

  27. onion tops, celery and red onion.

  28. In blender or food processor, combine vinegar, lemon juice, garlic,

  29. mustard and sugar. With machine running, slowly add vegetable and olive oils. Drizzle over rice mixture, season with salt and pepper to

  30. taste, and toss to combine.
