  1. 1/4 cup Wisconsin blue cheese

  2. 1/4 cup mayonnaise Avocado Puree:

  3. 1 cup pureed avocado Salt and pepper, to taste

  4. 1/4 teaspoon lemon juice Sandwich:

  5. 8 slices sourdough bread

  6. 2 ounces mixed greens

  7. 8 slices tomato

  8. 8 ounces smoked turkey, sliced

  9. 8 strips bacon, fried crisp

  1. For Blue Cheese Mayonnaise: Combine the cheese and mayonnaise in a small bowl, and mix well. For Avocado Puree: Mix the avocado puree, salt and pepper, and lemon juice until well-blended. To Assemble Sandwiches: Spread one bread slice with 1 to 2 tablespoons of the blue cheese mayonnaise. Layer the mixed greens, 2 tomato slices, 2 ounces smoked turkey, and 2 bacon strips on the bread. Spread another slice of bread with the avocado puree, and top the other half of the sandwich. Repeat, using all ingredients.
