  1. 1 kg pumpkin , cubed

  2. 3 tablespoons oil

  3. 250 g spinach leaves

  4. 250 g lettuce leaves

  5. 1 red capsicum , chopped

  6. 2 tomatoes , chopped

  7. 1 small cucumber , cubed

  8. 3 tablespoons chopped coriander

  9. 3 tablespoons chopped basil

  10. 1 red onion , thinly sliced

  11. 1 tablespoon chile pepper jam

  12. 2 tablespoons lime juice

  13. 1 tablespoon soy sauce

  14. 1 tablespoon palm sugar

  15. 1/4 cup stock

  1. To make dressing bring chili jam, lime juice, soy, sugar and stock to boil.

  2. Set aside.

  3. Toss cubed pumpkin in oil and and roast till golden 200c about 45minutes.

  4. Mix all salad ingredients together add pumpkin and drizzle over dressing!

  5. Can add 1-2 tablespoons roasted peanuts, and fresh sliced chili.
