  1. 5 green cardamom pods

  2. 2 tablespoon(s) whole black peppercorns

  3. 1 stick(s) cinnamon , cracked

  4. 1 cup(s) water

  5. 1 cup(s) sugar

  6. 1/2 cup(s) unsweetened Dutch-process cocoa powder

  7. Ice

  8. Heavy cream , for serving

  9. Citric acid , for serving

  10. Seltzer

  1. In a small saucepan, toast cardamom, peppercorns, and cinnamon over moderate heat until fragrant, about 2 minutes. Add 1 cup of water and bring to a boil. Remove from heat and let stand for 15 minutes. Stir in sugar and cocoa powder and return to a simmer. Cook for 5 minutes over low heat. Cool syrup, then strain it into a glass jar or plastic container.

  2. For each soda: In a tall ice-filled glass, stir 1/4 cup of syrup with 1 tablespoon of cream, and a pinch of citric acid. Top with seltzer, stir, and serve right away.
