  1. 10 cups 625g / 22oz Unbleached flour

  2. 1 cup 237ml Buttermilk powder

  3. 6 cups 960g / 33oz Light brown sugar - (firmly packed)

  4. 1/4 cup 59ml Grated orange zest

  5. 8 teaspoons 40ml Baking powder

  6. 4 teaspoons 20ml Baking soda

  7. 1 1/2 teaspoons 7 1/2ml Salt

  8. 1 teaspoon 5ml Ground cinnamon

  1. Whisk together flour, buttermilk powder, brown sugar, orange zest, baking powder, baking soda, salt and cinnamon in large bowl. Store by 3-cup quantities in resealable plastic bags or airtight containers.

  2. This recipe yields 6 (3-cup) bags.
