  1. 8 sweet potatoes-

  2. 4lbs - (beauregard yams can be used in place of of sweet potatoes)

  3. 1/2 C. packed light brown sugar

  4. 4 slices bacon

  5. 1 egg

  6. 2 Tbs. butter

  7. 1 tbs. ground cinnamon

  8. 1/2 tsp. salt

  9. 1/2 tsp. chipotle chili

  1. Pre-heat oven to 350 degrees F. Line 2 baking sheets w/foil. Arrange potatoes on 1 baking sheet. Bake until very tender, about 1 hr, let stand until cool enough to handle - 30 mins. Place rack on remaining baking sheet. spread 1/4 c. brown sugar on a plate. Coat both sides of each piece of bacon in brn. sugar and arrange slices on the rack. Bake until crisp, 15-18 mins. Remove from rack; cool and chop. Coat 2 qt. baking or souffle' dish with cooking spray. Remove potatoe flesh from skins. On med. speed, beat potatoes, egg, butter, cinnamon, salt, chipolte pepper, and remaining 1/4 c. brown sugar until blended; tranfer to baking dish. Bake until heated through, 30 mins. Serve sprinkled with bacon.
