  3. 3oz floury potatoes, such as King Edward or Maris Piper, peeled

  4. 2 onions, peeled, chopped

  5. 2 large free-range eggs, beaten

  6. 2 tsp salt

  7. 1 tsp freshly ground black pepper

  8. 1-2 tbsp vegetable oil, for shallow frying

  1. Firstly grate the potatoes and onion.

  2. Place the grated potatoes and onion onto a tea towel. Spread out then roll up like a roly poly. Squeeze all the liquid out.

  3. Place the potato and onion mixture into a bowl. Add the beaten egg. Add the seasoning. Stir well.

  4. Heat the vegetable oil in a frying pan. Place a spoonful of the potato mixture into the oil and form into a round about 6 cm across.

  5. Cook for about 5 minutes on one side and five minutes on the other until the latkes are golden and cooked through. These can be cooked earlier and reheated for 5 minutes in a moderate oven.
