  1. Macaroni Relleno

  2. 7 ounce package elbow macaroni

  3. 1 egg

  4. 1/2 cup skim milk

  5. 1/4 teaspoon ground cumin

  6. 4 ounce can chopped green chilies, drained

  7. 4 ounce can diced pimentos, drained

  8. 15 ounce can pinto beans, heated and drained

  9. 1 cup (4 ounces) shredded Monterey Jack Cheese

  10. 1 medium tomato-chopped

  11. 1 medium bell pepper

  12. 1/4 cup sliced green onions

  13. non-stick cooking spray

  14. Prepare macaroni according to package directions:drain. In medium

  15. bowl, blend egg,milk,and cumin; stir in hot cooked macaroni,chilies

  16. and pimento. Spray 9 inch nonstick skillet with nonstick cooking

  17. spray heat skillet. Add macaroni mixture. Cover; cook over low heat

  18. until mixture is set, about 15 minutes. Loosen edge with rubber

  19. spatula and invert onto warm platter. Top with remaining ingredients.

  20. Let stand 5 minutes before serving.
