  1. 2 zucchini

  2. 1 lb. ground turkey

  3. Chopped onion and garlicbasil, and dried oregano

  4. Several pinches of fennel seeds

  5. Jar pizza sauce

  6. 1/4- 1/2 cup chicken broth

  7. 2 cups ricotta cheese

  8. 2 eggs

  9. Several dashes of nutmeg

  10. green onions

  11. Fresh mozzarella

  1. Brown and season turkey, onions, and garlic.

  2. Drain fat and add pizza sauce and chicken broth.

  3. Bring to a boil and then simmer until it is not runny anymore Cut ends off zucchini and slice into 4 pieces long ways In a bowl, mix togtherer ricotta cheese, eggs, nutmeg, and green onions Now layer your lasagna – 4 strips of zucchini, ½ turkey and sauce mixture, as much of the cheese mixture as you would like (I only used about 2/3’s of it), then 4 more strips of zucchini, the rest of the sauce mixture, and top with sliced fresh mozzarella.

  4. Bake at 350F for an hour Let sit for 5-10 minutes
