  1. 2 tbsp grapeseed oil

  2. 20g chopped ginger

  3. 1/2; onion, chopped

  4. 1 tbsp cumin seeds

  5. 1 tbsp coriander powder

  6. 1 tsp turmeric

  7. 1 tsp salt

  8. Pinch of freshly ground pepper

  9. 1 tomato, chopped

  10. 1 large sweet potato, peeled and cut into 21/2;cm chunks

  11. 120ml water

  12. 1 small cauliflower, cut into bit sized florets

  1. Cauliflower with Sweet Potatoes 1) Place oil in a large non-stick skillet and heat over medium-high heat. Add the onion and ginger and cook for 4 mins. Stir in the spices and salt and pepper and toast for 15 secs and then add tomatoes, sweet potatoes and water. Bring to a boil and then turn down the heat and cook until they are tender, about 10 mins. Add the cauliflower and stir well. Place a tight fitting lid on the pan and cook untilthe cauliflower is tender-crisp, about 5 to 8 mins.
