  1. 1/2 cup all-purpose flour

  2. 1/2 cup white or yellow cornmeal

  3. 1 teaspoon salt

  4. 1 teaspoon cayenne pepper

  5. 4 trout

  1. In a shallow dish, mix the flour, cornmeal, salt and cayenne pepper. Dredge the trout in the flour mixture and set aside. Heat and oil a cast iron skillet and fry the fish for about 4 to 6 minutes on each side, or until the meat flakes with a fork. Take off the heat and serve immediately.
