  1. Cherry Rum Preserve

  2. Yield: 6 Jars

  3. 4 lb dark sweet cherries

  4. 1 lb granulated sugar

  5. 3/4 c dark rum

  6. Prepare 6 8oz jars.

  7. Wash, stem and pit cherries. In heavy saucepan, combine cherries

  8. and sugar and cook over low heat for 1 1/2 hours. Watch carefully

  9. and and stir often to prevent scorching. Remove from heat, let

  10. cool 5 minutes and stir in rum. Pack cherries into prepared jars.

  11. 5 minutes, if

  12. 1 month before using.
