  1. 1 pound diced, unpeeled red potatoes

  2. 1 cup diced yellow bell pepper (about 1 large)

  3. 1 cup sliced shiitake mushrooms

  4. 3 tablespoons water

  5. 1 tablespoon Simply Organic Grind to a Salt Seasoning , coarsely ground

  1. Preheat oven to 400°.

  2. In a 2-quart casserole dish toss together potatoes, peppers and mushrooms. Whisk water and seasoning in a small bowl and pour over potato mix.

  3. Bake 30 to 40 minutes until potatoes are tender.
