  1. Dressing

  2. 1/2 cup 118ml Bottled Thai peanut sauce

  3. 1 tablespoon 15ml Light mayonnaise

  4. 3 tablespoons 45ml Fresh lime juice

  5. Salad

  6. 1 Roasted chicken breast - boned and skinned

  7. 1 Carrot - coarsely grated (large)

  8. 1 Celery rib - very finely (medium) slivered

  9. 1 Red bell pepper - finely slivered (medium)

  10. 1/4 teaspoon 1 1/3ml Salt

  11. 3 cups 711ml Prepared torn lettuce

  12. 3 Lime wedges

  1. To prepare the dressing: Stir together the peanut sauce, mayonnaise and lime juice. Set aside.

  2. To prepare the salad: Dice the chicken breast finely. Combine with the carrot, celery, bell pepper and salt. Toss with about half of the dressing. Add the lettuce and toss gently.

  3. Serve the salad with a lime wedge and the remaining dressing on the side.
