  6. 1 1/4 lb Sorted uncooked red kidney

  7. -beans, rinsed

  8. 1 oz Sorted uncooked great

  9. -northern beans, rinsed

  10. 2 qt Water

  11. 1/2 c Each diced onion and sliced

  12. -celery

  13. 6 oz Pared potato, 1/4-inch cubes

  14. 4 sm Plum tomatoes, peeled,

  15. -seeded, diced

  16. 3/4 c Each sliced carrots and -zucchini

  17. 1/2 c Diagonally sliced green

  18. -beans

  19. 2 tb Tomato paste

  20. 2 Bay leaves

  21. 1 d Pepper

  22. 3 oz Uncooked small macaroni

  23. -(ditalini, elbows)

  24. PISTOU:

  25. 1 c Fresh basil leaves

  26. 1 tb Hot water

  27. 4 ts Olive oil

  28. 2 Garlic cloves, minced

  29. 1 oz Grated Parmesan cheese

  30. SOUP:

  31. SOUP: In 4-quart saucepan combine beans; add water

  32. and bring to a boil. Reduce heat to low , add onion

  33. and celery, and simmer for 30 minutes. Add remaining

  34. ingredients for soup except macaroni and simmer until

  35. 45 to

  36. minutes. Add macaroni, stir, and cook for about 5

  37. minutes.

  38. PISTOU: While macaroni is cooking, combine all

  39. ingredients for pistou except cheese in blender

  40. container. Process until smooth, scraping down sides

  41. of container as necessary. Transfer to small bowl and stir in cheese.

  42. TO SERVE: Remove and discard bay leaves from soup.

  43. Spoon pistou evenly into 8 soup bowls, then ladle soup

  44. evenly over pistou. Serve immediately.

  45. 8 servings of 1 cup each.
