  1. 6 lg Potatoes, quartered

  2. 6 md Onions, quartered

  3. 1/3 c Vegetable oil

  4. 1 ts Black pepper

  5. 1 tb Fresh parsley, chopped

  6. 1 tb Fresh basil, chopped

  7. 1 ts Fresh marjoram, chopped

  1. Preheat oven to 375F.

  2. Place potatoes & onions in shallow roasting pan.

  3. Combine oil & herbs & pour over the vegetables.

  4. Toss & bake, uncovered for 1 hour, or till fork tender.

  5. Turn occasionally to prevent sticking.
