  1. 2 10-oz. pkgs. frozen mixed vegetables

  2. 1/2 onion, chopped

  3. 3/4 cup tomato sauce, divided

  4. 1 tsp. chili powder Salt

  5. 3 corn tortillas

  6. 1 cup grated cheddar or muenster cheese

  1. Preheat oven to 350 degrees. Puree the vegetables, onion, 1/2 cup tomato sauce, chili powder and salt in food processor. Place a tortilla on the bottom of a buttered pie plate. Spread with vegetable sauce. Add second tortilla, rest of sauce and then third tortilla. Cover with remaining 1/4 cup tomato sauce and cheese. Cover with foil and bake for 25 minutes until heated through. You may want to put it under the broiler for a minute to brown the melted cheese.
