  1. Corn and Frito Salad

  2. 16-ounce package of frozen corn, thawed but not cooked

  3. 1 small red bell pepper, diced

  4. 1 small green bell pepper, diced

  5. 1 small red onion, diced

  6. 1 small can sliced ripe olives, drained

  7. 1 cup Catalina Dressing

  8. 1 cup grated longhorn cheese

  9. Frito Corn Chips

  10. Place the corn, bell peppers and onions into a bowl that has a

  11. tight fitting lid. Stir to incorporate and distribute vegetables

  12. evenly. Add Catalina dressing and stir again. Cover and refrigerate

  13. for a couple of hours.

  14. When ready to serve, remove to a shallow dish. Sprinkle the grated

  15. cheese over the top of the corn portion. Cover the top with Frito

  16. Corn Chips. Do not stir, corn chips will get soggy. Serve

  17. immediately.
