  1. 1 small avocado peeled and cut into pieces

  2. 200g roast turkey breast, chopped

  3. 100g mini plum tomatoes , quartered

  4. 50g watercress , leaves only

  5. 2 slices smoked bacon , cooked

  6. 2 tbsp Roquefort , crumbled

  7. 1 tbsp red wine vinegar

  8. extra-virgin olive oil

  9. 1 tsp Dijon mustard

  1. To make the dressing mix 2 tbsp oil with the other ingredients in a small bowl and season.

  2. Arrange all the salad ingredients, except the bacon, on a serving plate. Crumble over the bacon and spoon over the dressing just before serving.
