  1. 1/4 cup dried apricots, thinly sliced

  2. 1/4 cup apricot nectar

  3. 1/4 cup pitted dried cherries, cut in half

  4. 1/4 cup cherry juice OR red grape juice

  5. 12 cups baby spinach leaves, washed and dried

  6. 1/4 cup olive oil

  7. 1/2 red onion, minced

  8. 1/4 cup raspberry vinegar

  9. 2 Tbsp. honey

  10. 1/8 tsp. pepper

  11. 1/4 tsp. salt

  1. In small pan, combine apricots and apricot nectar. Heat to boiling and simmer for 2-3 minutes. Remove and let cool. Repeat process, using new pan, dried cherries, and cherry or red grape juice. Let fruits cool in liquid. When ready to serve, drain fruits and toss with spinach leaves in serving bowl. In small saucepan, cook red onion in olive oil until tender. Remove from heat and stir in vinegar, honey, salt, and pepper. Immediately drizzle over salad, toss to coat, and serve. Serves 8-10
