  1. 1/2 cup 99g / 3 1/2oz Butter - (1 stick)

  2. 1 tablespoon 15ml Golden syrup

  3. 3/4 cup 46g / 1.6oz Flour

  4. 1/2 cup 99g / 3 1/2oz Sugar

  5. 2/3 cup 61g / 2 1/5oz Shredded sweetened coconut

  6. 3/4 cup 177ml Oatmeal

  7. 1 teaspoon 5ml Ground ginger

  8. 1 teaspoon 5ml Baking soda

  9. 1 tablespoon 15ml Hot water

  1. Recipe Instructions Heat the oven to 350 degrees. Lightly grease a baking sheet. Melt the butter and golden syrup in a saucepan over low heat. Combine the flour, sugar, coconut, oatmeal and ginger in a mixing bowl. Stir in the melted mixture. Dissolve the baking soda in the water, then stir it into the batter. Roll the batter into 1-1/2-inch balls and place them on the baking sheet 2 inches apart. Flatten them with a fork dipped in flour. Bake the biscuits until golden brown, 15 to 18 minutes. Cool on a wire rack before storing in an airtight jar.
