  6. 4 c Med coconut milk

  7. 1 1/2 c Chicken stock

  8. 3 Quarter-sized pieces dried

  9. -galangal, also known as

  10. -Siamese Ginger, or twice

  11. -as much fresh galangal

  12. 4 Stalks fresh lemon grass,

  13. -bruised, cut into 2-in

  14. -lengths

  15. 1 Lge whole boned chicken

  16. -breast, cut into 1/2-in

  17. Pces (about 1 lb, boned)

  18. 4 tb Fish sauce, Nam Pla

  19. 5 Fresh kaffir makrut lime

  20. -leaves (if available)

  21. 3 Or-4 fresh serrano chiles,

  22. 1 Sliced into rounds

  23. 2 Fresh limes, juiced

  24. 2 tb Frsh coriander lves, chopped

  25. In Thai, this is called Gai Tom Kha. Be sure to use

  26. unsweetened coconut milk, which is available in Asian

  27. markets. IN A SAUCEPAN, bring the coconut milk,

  28. chicken stock, galangal and lemon grass to a boil;

  29. reduce and simmer for 20 minutes. Strain stock;

  30. discard galangal and lemon grass. Return stock to a

  31. boil, add chicken and reduce to a simmer until tender

  32. 2 minutes

  33. chiles. Stir in lime juice. Garnish with more chiles

  34. to taste and coriander leaves. Serve hot. --
