  1. 3 cups 711ml Defatted chicken stock

  2. 2 tablespoons 30ml Grated lemon rind

  3. 1 tablespoon 15ml Low-sodium soy or tamari

  4. Sauce

  5. 4 Boneless skinless chicken

  6. Breast halves

  7. 1 cup 237ml Low-calorie mayonnaise

  8. 1 tablespoon 15ml Lemon juice

  9. 1 tablespoon 15ml Dijon mustard

  10. 1/2 teaspoon 2 1/2ml Minced fresh tarragon

  11. Minced chives and lemon

  1. In a large, shallow skillet over medium-high heat, bring to a boil chicken stock, half the lemon rind, and soy sauce. Lower heat to simmer. Add chicken breasts, cover, and poach for 10 minutes. Remove from poaching liquid and chill if desired.

  2. In a small bowl combine mayonnaise, lemon juice, remaining lemon rind, chives, mustard, and tarragon. Chill until ready to serve.

  3. Serve each half breast with a generous dollop of lemon mayonnaise on top. Garnish with minced chives and a slice of lemon.
