  1. 2 cups uncooked, long grain rice

  2. 2 teaspoons curry powder

  3. 1 teaspoon turmeric

  4. 1 teaspoon salt

  5. 1 cup frozen peas

  6. 1 cup frozen corn kernels

  7. 4 spring onions, finely chopped

  8. 2 celery sticks, diced small

  9. 2 carrots, grated

  10. 1/2 red capsicum, diced small

  11. 1 red apple diced small (leave the skin on)

  12. 250 gm roasted, un-salted cashews Salt and pepper to taste

  1. Method : Bring 2 - 3 litres of water to the boil in a large saucepan. Add the rice, curry powder, turmeric and salt and cook until the rice is tender which will be roughly 12 minutes. Stir every couple of minutes. Drain the rice, rinse it, drain again and let it cool.
