  1. 1 cup softened butter or margarine

  2. 1 1/2 cups packed brown sugar

  3. 2 large eggs

  4. 1 teaspoon vanilla extract

  5. 2 cups flour

  6. 1 teaspoon baking powder

  7. 1 lb. pitted dates, chopped

  8. 1 cup rolled oats (not instant)

  9. 1/2 cup unsweetened coconut

  10. 1/2 chopped walnuts

  1. Instructions Preheat the oven to 350 degrees. Cream the butter and brown sugar together. Beat in the eggs, one at a time. Add vanilla and beat until mixture is smooth. In a separate bowl, stir together the flour and baking soda. Add half of the margarine mixture to the flour and blend well. Once it's incorporated, add the remaining mixture and blend again. Stir in the dates, oats, coconut, and walnuts and mix well. Drop 1 1/2 tablespoon-sized balls of dough onto greased baking sheets. Bake for 10 minutes.
