  1. 1 1/5kg baby Yukon Gold or new potatoes, halved

  2. Salt

  3. 1 tbsp ground fennel

  4. 1 tbsp smoked sweet paprika

  5. 2 tbsp chilli powder

  6. 1 tbsp griddle seasoning or coarse salt and pepper

  7. 2 tbsp grainy mustard

  8. 2 tbsp red wine vinegar

  9. 80ml extra-virgin olive oil

  10. 1 small red onion, chopped

  11. 3 to 4 ribs celery with leafy greens, finely chopped

  12. Generous handful fresh flat-leaf parsley, coarsely chopped

  13. 35g chopped yellow hot pepper rings

  1. Potato salad Fra Diavolo 1) Place the potatoes in a large saucepan and cover with water. Bring to the boil then salt the water. Cook the potatoes for 12 to 15 minutes until tender.

  2. While the potatoes are cooking, combine the fennel, paprika, chilli powder, grill seasoning and mustard with the vinegar. Whisk in the olive oil and add the onion, celery and parsley to the bowl.

  3. Drain the potatoes and toss them in the dressing while they are still hot, so they will absorb more dressing and flavour. Garnish the salad with the hot pepper rings.
