  1. 1 cup minced onion

  2. 2 teaspoons butter

  3. 2 lbs fresh cauliflower

  4. 4 cups chicken broth

  5. 1 teaspoon chicken bouillon granule

  6. 3 cups milk

  7. 2 cups shredded swiss cheese

  8. 2 teaspoons curry powder

  9. 2 teaspoons cornstarch

  10. 1/4 cup water

  1. Saute onion in butter until tender.

  2. Break cauliflower into florets.

  3. Combine onion, cauliflower, chicken broth and bouillon.

  4. Simmer about 10-15 minutes.

  5. Return puree to pan and add milk, cheese and curry powder.

  6. Combine cornstarch and water.

  7. Stir into hot soup and heat slowly until slightly thick.

  8. Serve with seasoned croutons. ?
